One of my favorite dishes to cook is Frittata. Frittata is a great dish to serve for breakfast or even as the center of a sandwich between ciabatta bread and a nice sharp provolone cheese on the side.
RICK’S FRITTATA
Serves 6-8
INGREDIENTS:
- 12 grade A large eggs
- 1 cup grated Pecorino Romano cheese
- 5 medium fresh basil leaves
- ¼ cup milk
- ½ lb sausage
- 2/3 sweet onion sliced
- 2-3 peppers (sweet medium or hot or mixed) cut into small pieces
- 5-6 medium mushroom caps sliced thin
- Sea salt
- Extra Virgin Olive Oil
STEP-BY-STEP INSTRUCTIONS:
- Break sausage into small pieces and place in a skillet. Add three TBSP Extra Virgin Olive Oil
- Sautee until 2/3 cooked
- Add peppers onions and mushrooms
- Preheat Oven to 325 degrees
- Salt to taste
- Sautee until onions are slightly caramelized and mushrooms and peppers are cooked
- While ingredients are sauteing break 12 eggs into a large bowl and beat
- Add milk pecorino & basil beat until well blended
- Take a 11” Teflon skillet or glass dish of similar size and spray lightly with no stick and drizzle very lightly with Extra Virgin Olive Oil
- Pour egg mix into pan
- Add sausage and vegetables
- Spread evenly and place in oven. Allow to bake until center is firm (about 30 – 40 min) check after 20 min and rotate
- Allow to sit for 10 minutes and remove from pan or serve from glass dish
