Summertime is full of all sorts of great seasonal treats. Fresh produce is optimal and there is nothing like fresh tomato salad. One of my favorite activities during the spring and summer into fall is tending to my garden. The rewards of picking fresh produce from your garden trumps any satisfaction one would get from cutting the grass! I enjoy the evening pruning and tying up the peppers and tomatoes. Relaxing after a hectic day at work and the many rewards at harvest makes vegetable gardening one of my favorite summer activities. SUMMER FRESH TOMATO SALAD
- 4 Medium Sized Ripe Tomatoes Cut into Bite Sized Chunks
- 3-4 oz Fresh Mozzarella
- 1 Medium Cucumber Peeled and Sliced
- ½ Medium Sweet Onion Sliced
- 2 Cloves Garlic chopped
- 5 Basil Leaves Chopped Large
- 3 oz Extra Virgin Olive Oil
- Sea Salt
Mix tomatoes, mozzarella, cucumber, onion, garlic, and basil in a medium sized bowl, add EVOO and sea salt to taste. Put in refrigerator for 15 minutes. Served with warm crusty ciabatta bread, lots of it! You won’t want to waste any of the juice!
